Healthy and Easy 10-minute Tomato Appetizer with Cauliflower Rice

Ingredients
  

  • 2 Campari Tomatoes, cut in half
  • ¾ cup frozen cauliflower rice
  • ½ clove garlilc minced
  • ¼ tsp Nutritional Yeast
  • 1 pinch salt
  • 1 basil leaf, sliced

Instructions
 

  • Preheat your toaster oven to broil.
  • Rinse the tomatoes and pat them dry. Cut each tomato in half and set aside.
  • In a mixing bowl, combine the cauliflower rice, minced garlic, nutritional yeast, and salt. Mix well.
  • Place the tomato halves, cut half facing up, on a baking sheet lined with parchment paper.
  • Scoop a small amount of the cauliflower rice mixture onto each tomato half.
  • Place the baking sheet in the toaster oven and broil for 10 minutes, or until the cauliflower rice is lightly browned.
  • Transfer to serving dish and garnish with sliced basil.
