Healthy and Easy 10-minute Tomato Appetizer with Cauliflower Rice

Ingredients
  

  • 2 Campari Tomatoes, cut in half
  • ¾ cup frozen cauliflower rice
  • ½ clove garlilc minced
  • ¼ tsp Nutritional Yeast
  • 1 pinch salt
  • 1 basil leaf, sliced

Method
 

  1. Preheat your toaster oven to broil.
  2. Rinse the tomatoes and pat them dry. Cut each tomato in half and set aside.
  3. In a mixing bowl, combine the cauliflower rice, minced garlic, nutritional yeast, and salt. Mix well.
  4. Place the tomato halves, cut half facing up, on a baking sheet lined with parchment paper.
  5. Scoop a small amount of the cauliflower rice mixture onto each tomato half.
  6. Place the baking sheet in the toaster oven and broil for 10 minutes, or until the cauliflower rice is lightly browned.
  7. Transfer to serving dish and garnish with sliced basil.
