Gnocchi Primavera

It was Friday around 3:00 pm. My 4 year old asked what’s for dinner. That’s when it dawned on me that I didn’t know… I usually have a plan, but hey, nobody’s perfect. Luckily, my husband had picked up some frozen Cauliflower Gnocchi from Trader Joe’s as well as this amazing veggie mix from Costco. Done! I was able to throw together this Gnocchi Primavera on the quick. What did I love the most about this quick throw together Gnocchi Primavera? I only used 1 pan to make it. That’s right, just 1 pan! and, don’t tell them, but the kids sat down and ate a whole plate of veggies!

Ingredients you’ll need for Gnocchi Primavera

Here’s the shopping list for this dish:

  • 1 spray of olive oil cooking spray, just to prevent food from sticking
  • 1 bag of Trader Joe’s Cauliflower Gnocchi
  • 1 bag of Pura Vida Fire Roasted Primavera Mustura blend
  • 1 roma tomato (optional)
  • 1/2 jar of Marinara sauce

The Trader Joe’s Cauliflower gnocchi is from Trader Joe’s, obvi. LOL

I love the PuraVida brands because they come pretty darn close to getting fresh veggies and prepping them yourself, but all the work is done for you! Olive oil spray and the roma tomato will be pretty easy to locate. Of course, Amazon has the olive oil spray if need-be.

I got the Marinara sauce from Amazon, but it’s available at Whole Foods as well.

How long will this Gnocchi Primavera take to prepare?

Almost no time at all! This quick and healthy recipe is seriously one of the simplest things to make. All in, you’re looking at 15 minutes. I mean, you really just throw it all into the pan and away we go!

Gnocchi Primavera

Equipment

  • 1 frying pan

Ingredients
  

  • olive oil spray
  • 3 cups Veggie Blend Primavera Mistura or other mix
  • 1 bag Cauliflower Gnocchi Trader Joe's
  • ½ to 1 jar Maranera Sauce organic, no sugar added
  • 1 roma tomato optional

Instructions
 

  • Warm a frying pan to medium heat.
  • Lightly coat the pan with olive oil spray.
  • Add the veggie mix to the warmed pan, heat about 5 – 6 minutes, until the veggies are thawed.
  • Add the whole bag of cauliflower gnocchi and chopped roma tomato (optional), mix well.
    Continue to heat for about 6 – 8 minutes.
  • Add the marinara sauce and cook for an additional 1 -2 minutes.
  • Split the contents of the pan into two pasta dishes. Enjoy!
