Divide the mixture into six ramekins or muffin cups, and top each one with chopped strawberries. Bake for 13-15 minutes, or until the souffle cups have risen and turned golden brown. So Easy!

Also, I must mention, that I tend to ONLY use these parchment paper muffin cups. I mean like, for anything muffin or cupcake-like. Trust me, they will make your life so easy when it comes to pulling these puppies out of the paper; you’ll be amazed when they just peel right off the souffle cups!

Ingredients
  

  • ½ cup Cottage Cheese
  • ½ cup Instant Oats
  • 4 egg whites
  • 1 tsp vanilla
  • Tbsp Swerve granular sweetener 0 calorie sweetener
  • ¼ tsp baking powder
  • ¼ tsp cinnamon powder
  • ¼ cup fresh strawberries, chopped small

Instructions
 

  • Preheat oven to 350°.
  • Line a muffin tin with 6 parchment paper muffin cups. Recipe will make 6 souffles.
  • Into a blender, add all of the ingredients except strawberries. Blend until oats are smooth, about 1- 2 minutes.
  • Divide batter evenly into each muffin reservoir, about ¼ cup per resevoir.
  • Evenly distribute the chopped strawberries into each muffin cup.
  • Bake for about 18 – 20 minutes at 350°. Test for doneness with a knife or toothpick to ensure souffles are done.
  • Remove from oven. Let cool about 10 minutes. Enjoy!
