Low-Fat Strawberry Souffle Cups

- ½ cup Cottage Cheese
- ½ cup Instant Oats
- 4 egg whites
- 1 tsp vanilla
- 1½ Tbsp Swerve granular sweetener 0 calorie sweetener
- ¼ tsp baking powder
- ¼ tsp cinnamon powder
- ¼ cup fresh strawberries, chopped small
Preheat oven to 350°.
Line a muffin tin with 6 parchment paper muffin cups. Recipe will make 6 souffles.
Into a blender, add all of the ingredients except strawberries. Blend until oats are smooth, about 1- 2 minutes.
Divide batter evenly into each muffin reservoir, about ¼ cup per resevoir.
Evenly distribute the chopped strawberries into each muffin cup.
Bake for about 18 - 20 minutes at 350°. Test for doneness with a knife or toothpick to ensure souffles are done.
Remove from oven. Let cool about 10 minutes. Enjoy!
