Low-Fat Strawberry Souffle Cups

Made with protein-packed egg whites, low-fat cottage cheese, and natural sweeteners, they're a guilt-free treat that will keep you satisfied all morning long.

Ingredients
  

  • ½ cup Cottage Cheese
  • ½ cup Instant Oats
  • 4 egg whites
  • 1 tsp vanilla
  • Tbsp Swerve granular sweetener 0 calorie sweetener
  • ¼ tsp baking powder
  • ¼ tsp cinnamon powder
  • ¼ cup fresh strawberries, chopped small

Instructions
 

  • Preheat oven to 350°.
  • Line a muffin tin with 6 parchment paper muffin cups. Recipe will make 6 souffles.
  • Into a blender, add all of the ingredients except strawberries. Blend until oats are smooth, about 1- 2 minutes.
  • Divide batter evenly into each muffin reservoir, about ¼ cup per resevoir.
  • Evenly distribute the chopped strawberries into each muffin cup.
  • Bake for about 18 - 20 minutes at 350°. Test for doneness with a knife or toothpick to ensure souffles are done.
  • Remove from oven. Let cool about 10 minutes. Enjoy!
