Mom’s Chunky Sugar-Free Cookies
Ingredients
Dry Ingredients
- 1 cup Birch Benders Paleo Pancake Mix
- 1 tsp baking soda
Wet Ingredients
- 2 egg whites
- 1 tsp vanilla
- ½ cup water
Mix-Ins
- 1 cup chopped pecans
- ½ cup Choc Zero Suagr-Free Baking Chips, any flavor can substitute sugar-free chocolate chips like Lily's Brand
- ¾ cup dried tart cherries optional
Instructions
- Pre-heat oven to 350°.
- Line a cookie sheet with parchment paper, set aside.
- In a large bowl, mix all dry ingredients together.
- Add all of the wet ingredients into the mixing bowl with the dry ingredients. Mix well to form a thick dough.
- Fold in the Mix-ins.
- Drop dough by the spoonful onto the prepared cookie sheet to make 12 cookies.
- Bake at 350° for 12-14 minutes until underside turns slightly brown.
- Remove from baking sheet, allow to cool for about 10 minutes. ENJOY!
