Mom's Chunky Sugar-Free Cookies

Mom's Chunky Cookies are not only sugar-free but also diabetic-friendly!

Ingredients
  

Dry Ingredients
  • 1 cup Birch Benders Paleo Pancake Mix
  • 1 tsp baking soda
Wet Ingredients
  • 2 egg whites
  • 1 tsp vanilla
  • ½ cup water
Mix-Ins
  • 1 cup chopped pecans
  • ½ cup Choc Zero Suagr-Free Baking Chips, any flavor can substitute sugar-free chocolate chips like Lily's Brand
  • ¾ cup dried tart cherries optional

Method
 

  1. Pre-heat oven to 350°.
  2. Line a cookie sheet with parchment paper, set aside.
  3. In a large bowl, mix all dry ingredients together.
  4. Add all of the wet ingredients into the mixing bowl with the dry ingredients. Mix well to form a thick dough.
  5. Fold in the Mix-ins.
  6. Drop dough by the spoonful onto the prepared cookie sheet to make 12 cookies.
  7. Bake at 350° for 12-14 minutes until underside turns slightly brown.
  8. Remove from baking sheet, allow to cool for about 10 minutes.
