Avocado Fries

You don’t have to take a very deep dive on the internet to find a number of recipes for avocado fries. They are all the rage right now, and it’s for good reason. Avocados are more nutritious than french fries, and can satisfy that salty craving. Also, they are loaded with “good” fats and are full of flavor. The best part is that they are super easy to make! You just scoop out the inside, slice, coat, and bake. Simple!

But for real, these avocado fries are different than the rest because they are vegan, gluten free, diabetic friendly, paleo, and keto. The secret? Almond flour. By using almond flour instead of panko or regular bread crumbs, you’ll get more protein and you’ll skip the empty calories.

How ripe should the avocado be?

I’m sure you’ve seen people at the grocery store, or maybe even done it yourself, squeezing avocados to determine if they’re ripe. While commonplace, there is a better way to determine ripeness. The best way to tell if an avocado is ripe is to actually gently press the top, right next to where the stem would be, with the tip of your thumb. By doing it this way, you’ll get an accurate feel of the avocado’s firmness without bruising or denting the body. 

For this avocado fries recipe, since we’ll be cooking the avocado, you’ll want it to be on the firmer side. Not hard like a rock, but not too mushy either. Soft avocados make great guacamole and toppings, but will fall apart if you try to use it for avocado fries. 

How to cut the avocado

Avocados are a bit delicate and should be handled gingerly. Keep in mind, for this recipe, you’ll be needing the avocado to stay as intact as possible. 

The first step is to cut the avocado in half lengthwise, moving the knife around the pit to make a complete cut through the skin. Next, gently twist the sides in opposite directions until the avocado splits apart. Gently remove the pit by prying it out with a knife or a spoon, all while keeping the fruit as in tact as possible. Once the pit is out, slide a spoon under the skin to scoop it out as carefully as possible. Place it flat side down on a cutting board and slice it into wedges. 

The wedges will then be coated with the almond flour breading and placed on a cookie sheet for baking. Before placing them into the oven, spray or drizzle a little bit of olive oil to help them crisp up.

Avocado Fries

Equipment

  • 1 knife
  • 1 spoon
  • 1 baking sheet
  • parchment paper
  • 1 mixing bowl

Ingredients
  

  • 1 large Avocado medium ripe
  • 1 spray olive oil

Breading

  • ¼ cup Almond Flour
  • ½ tsp Nutritional Yeast
  • tsp garlic salt

Dipping Sauce

  • 1 ½ Tbsp Greek Yogurt lowfat
  • ½ Tbsp Buffalo Sauce Primal Kitchen

Instructions
 

  • Preheat the oven to 400°.
  • Line a baking sheet with parchment paper, set aside.
  • Mix all of the breading ingredients into a mixing bowl, set aside.
  • Cut the avocado in ½ lengthwise, twist to open, remove the pit.
  • Very gently, scoop out the fruit with a spoon, while trying to keep the avocado in tact.
  • Slice the avocado lengthwise into wedges.
  • One at a time, dip the avocado wedges into the breading mix, then place onto the baking sheet in a single layer.
  • Spray or drizzle a lit bit of olive oil over the wedges. This will help them crisp up in the oven.
  • Bake at 400° for 10 minutes.
  • Flip the avocado wedges and cook for an additional 5 minutes.
  • While the avocado is baking, mix the sauce ingredients and set aside.
  • Remove from the oven, enjoy.
