What makes these “healthy brownies” so good for you?
I’m sure you’re wondering, “how can brownies be healthy?” Well, I’m glad you asked. In this recipe, I’ve left out all of the usual suspects, like sugar, processed flour, canola/vegetable oil, butter, etc. Instead, this recipe calls for sweet potatoes, real cocoa, almond butter, and dates. It may be impossible to think that all of these amazing ingredients can come together to form anything delicious, but they really do!
Helpful Tips
The single, most important thing to note is to let these healthy brownies cool for about 10 – 15 min. outside of the oven once they’re done. They are vegan, so there is no egg to bind them together in the cooking process. Therefore, the more you let them cool off, the more they’ll stay intact and not turn into a crumbly mess.
Another helpful tip is that a food processor really is the best tool to use. If you don’t have one, a NutriBullet or high powered blender will work, it may just take a bit to break down the dates.
Lastly, line your loaf pan with parchment paper; don’t skip this step! The healthy brownies will still cook just the same, but with parchment paper, they will lift right out of the pan with almost no clean up. You’ll be so happy you did this! How to prepare the sweet potato
Sweet potatoes may look scary, but they really are not. To make sweet potato puree, just follow these easy steps:
- Peel the sweet potato
- Chop it up into cubes or slices
- Steam with the lid on in a steam pot or just a steamer basket, place in a pot for about 10 -15 min. or until the sweet potatoes fall apart easily with a fork
- Transfer sweet potatoes into a bowl and mash with a fork or potato masher until pureed
If you do not want to go through the steps of cooking and pureeing the sweet potato, you could always buy it canned.
