Ingredients
  

Salad

  • 2 cups cooked lentils
  • 2 Persian cucumbers cut lengthwise, then chopped
  • 1 cup grape tomatoes cut in quarters
  • cup red onions chopped
  • ¼ cup fresh parsley chopped
  • cups kale salad mix Trader Joe's Ready Set Salad or similar
  • 1 Tbsp ground flax seed
  • ½ avocado

Dressing

  • Juice from 1 lemon
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic
  • ½ tsp sea salt
  • ¼ tsp ground ginger
  • ¼ tsp black pepper
  • ¼ tsp cinnamon

Instructions
 

  • Cook and cool lentils down to room temperature or colder.
  • Mix all ingredients from the salad list, except avocado, into a large salad bowl. Mix well.
  • In a separate bowl, mix all ingredients from the salad dressing list. Whisk or cover tightly and shake until well incorporated.
  • Pour the dressing over the salad and mix.
  • Gently fold in the chopped avocado, being careful not to overly mash it.
  • Enjoy.
