Low-Fat Creamy Shrimp Chowder
This creamy shrimp chowder that is packed with healthy vegetables, low-fat goat cheese, and a homemade marinara sauce that is easy to make and loaded with flavor.

- 12 oz shrimp deveined, peeled, no tail
- 4 oz sweet peppers deseeded and chopped
- 2 scallions white ends only
- 4 oz grape tomatoes halved
- 4 oz broccoli florets frozen
- 2 cups Healthy Marinara Sauce from www.GoodnessGalore.com
- 4 oz goat cheese
Heat a large frying pan to medium heat. Lightly coat a frying pan with olive oil cooking spray. Add the shrimp to the pan and cook on each side for 2-3 minutes or until they turn pink and opaque. Remove from from the pan and, set aside.
In the same pan, over medium heat, add the sweet peppers, cook for about 2-3 minutes. Add the scallions, grape tomatoes, and broccoli to the pan and stir well to combine. Saute for about 5 minutes, stirring frequently. Add 2 Tbsp of water and cook until the water has evaporated. Remove from the pan, set aside.
In the same frying pan, heat up the Easy Homemade Marinara sauce over medium heat. Add the goat cheese; mix until melted and evenly blended.
Add the veggies back into the frying pan, mix until evenly combined to form the chowder.
Separate the chowder into two separate bowls. Top with the cooked shrimp. Option to garnish with dry basil, black pepper, and crushed red pepper.
