Shrimp Fajitas Bowl

Ingredients
  

  • 10 oz Shrimp Peeled and Deveined
  • 1 Red Bell Pepper deseeded and chopped into cubes
  • 1 Poblano Pepper deseeded and chopped into cubes
  • ½ White Onion chopped into cubes
  • ½ tsp Chili Powder
  • ½ tsp Cumin
  • 1 tsp Onion Powder
  • 1 tsp Adobo Seasoning

Garnish

  • 1 Medium Avocado
  • ½ cup Plain, Nonfat Greek Yogurt
  • ½ cup Mild Salsa

Instructions
 

  • Place all ingredients into a large frying pan except Shrimp along with 2 Tbsp. of water.
  • Cook about 10 minutes, stirring occasionally, until the veggies are soft, and the spices are mixed through.
  • Add Shrimp to cook with the veggies, about 2 -3 minutes until the shrimp turn pink.
  • Divide into two portions.
  • Garnish each portion with ½ sliced Avocado, ¼ cup of Nonfat Plain Greek Yogurt, and ¼ cup of Mild Salsa. Enjoy.
