Method
- Place all ingredients into a large frying pan except Shrimp along with 2 Tbsp. of water.
- Cook about 10 minutes, stirring occasionally, until the veggies are soft, and the spices are mixed through.
- Add Shrimp to cook with the veggies, about 2 -3 minutes until the shrimp turn pink.
- Divide into two portions.
- Garnish each portion with ½ sliced Avocado, ¼ cup of Nonfat Plain Greek Yogurt, and ¼ cup of Mild Salsa. Enjoy.
